They do, but only like the far south south of Florida. Around the Everglades - that's the big, still-swampy part of the state. It tastes like chicken... supposedly. I've never had.

I'm from St. Augustine. More Spanish architecture than swamp, a lot of tourist traps, and at least sixteen streets named after Ponce de Leon, the explorer who tried to find the Fountain of Youth.
